Is saffron harmful?
The answer is no, and if you’re eating saffron leaves regularly you’ll have no problem.
However, this isn’t true because of some toxic compounds in the saponin. These compounds can cause you to become sensitive to other compounds in the leaves, in particular. It gets worse though and the plant itself can actually harm your kidneys because of its high content of potassium, a mineral which your body needs to keep you alive. A lot of saffron contains tannins called tannin-oligosaccharides, meaning their value and health is much higher when you eat plenty of them.
Tannins are used in cosmetics, soaps, skin care products, pharmaceuticals etc, to keep your skin healthy and supple. Tanninol is used in a similar way to the one found in saffron which helps in your metabolism. You’ll feel it when you eat your saffron leaves, because tannins and other compounds in some of the leaves are absorbed into your blood stream through saliva and the digestive system. This means it’s extremely important that you are hydrated throughout the day, otherwise you won’t be well able to absorb the food which you’ve just eaten.
