You can buy 1 kg of saffron in India and get as low as Rs 20 per kg (or less in some states), and 1 kg in America will set you back a pretty penny. But that’s not all that you can expect. In India, it’s cheaper to grow 1 kg (or less) of saffron than it is in countries such as the USA and Germany, where saffron isn’t grown. According to India’s Food Processing Corporation, if you plant a foot of saffron, it costs around Rs 50 to grow (depending on where you live).
How much does 1 kg of saffron cost?
If you plant the entire flower in a plant pot (which can save you money), it’ll cost around Rs 600-900 for a kilogram, just to get it to the market. That’s pretty cheap. But it does make you think the cost of saffron is pretty high, regardless of whether the seed is from local or imported varieties.
In India, they get the price per gram of saffron (saffron bale) from a private company which then takes the price per kg of saffron (saffron bale) and then divides it by 10 to get the price per kg of saffron. But they’ll still split the cost by 100 so that the price of an average kilogram of saffron in India is around Rs 1,100. It’s definitely a steep price, especially since there are more varieties of saffron that you’ll find in South Asia, North Africa, the Middle East, East Asia and Australia. (Saffron bales are grown in parts of India, Pakistan and Bangladesh, amongst other places.)
What if I’re not sure what type of saffron to buy?
It’s worth spending a little time determining the exact type you’re buying. A lot of people buy saffron in bulk, which basically means the same plant or other plants are used for 1 lakh plants for less than they would cost to grow locally. The plant from which saffron is made can take up to 10 years or more before it reaches maturity and it then takes several more years before an harvest may happen in the form of flowers and leaves. So you could be buying a saffron plant that will take a while to mature if you’re doing your research right.
